The Comforts Found In Baking Bread
I absolutely LOVE bread in any form! There is something very comforting about the smell of fresh bread baking and I love the time spent kneading the bread and working the dough back down to allow for the 2nd rise! There is nothing better than a piece of warm, buttery, fresh bread with a meal or a simple snack! 😉 I just simply look very forward to bread baking day.
Those of you that have been following us for a long time know we love our bread and probably also know that I love experimenting in my kitchen with my own recipes as well as often trying new recipes!
Our diet is very well rounded, but like our ancestors we find great pleasure in our bread and are even known to make it on a fire in the woods with some simple ingredients!
Food Sensitivities And Allergies
Like many of you, we have dietary issues but have found great recipes to accommodate our needs. I can only have organic and non-GMO foods and my body does much better with as little gluten as possible. The Mountain Boy was on a gluten-free and dairy-free diet from age 7 to 22. Now he is just on a dairy-free diet, but he too does better with less gluten. Honestly, I think this is true of most of us if we were paying attention to how our bodies react and feel after we eat items with gluten. I find by milling my own flours that helps greatly, using low or no gluten flours, ancient grains and also using sourdough, fermented, or sprouted bread recipes.
Not All Bread Is Alike!
If you do purchase your bread, PLEASE know that not all breads are alike. If I have to purchase store-bought bread or wraps they MUST be organic and non-GMO. Many people steer away from such items because they are more costly and in small towns even more so, like upwards of $5 to $7 a loaf, but in the bigger towns and in outlet stores for big bakeries, you can find fabulous deals on the wholesome food your body needs. The truth is our health is worth the price tags guys – the bad food in our society is slowly killing us. There are some great companies on the market providing wholesome food and I head their direction when we are in a pinch and things are incredibly busy, BUT honestly, I prefer to make my own.
The Importance Of What We Put In Our Bodies
All our raw ingredients are non-GMO and organic, as a result, we are much healthier with less inflammation in our bodies to cause unnecessary aches and pains, we sleep better, and our guts are so much healthier too. Especially when I am making my sourdough, fermented or sprouted bread.
We love seedy robust bread with flavor and protein and we love Dave’s Killer Bread so my goal with this recipe was to come as close to Dave’s as I could. We were really pleased with the results and I hope you all enjoy it too!
Trayer’s Organic Crazy Killer Bread Recipe
Ingredients
- 2¼ cup warm water
- 2 tbsp yeast or sourdough starter
- 2 tbsp coconut oil or avocado oil
- 2 tbsp honey
- 2 tbsp molasses
- 1 tbsp Himalayan or Celtic sea salt
- ¼ cup flax seeds
- ¼ cup hemp seeds
- ¼ cup thick cut oats
- ¼ cup sunflower seeds
- ¼ cup chia seeds
- 4 cup Wheat Montana whole wheat flour (approx)
Directions
- Mix together warm water, yeast, honey, salt, molasses, and coconut oil. Let it sit for a few minutes.
- Add the rest of your dry ingredients, minus the flour and mix together just enough to wet the ingredients.
- Slowly add the flour. Just until the dough pulls away from your bowl and then place your dough on a floured counter and give it a good knead just until the dough stops absorbing the flour.
- Wash your dough bowl out and give it a good coat of oil. Add your dough to the bowl and cover with a warm damp cloth and let rise until double in size.
- Punch down, knead it out again and place back in the bowl. Letting it rise once again to double in size and punch it down, knead it out and cut the dough in half.
- Oil two loaf pans and knead out the two dough balls and place in the pans.
- Cover the tops with a light oil (I use olive or avocado oil). Again cover with a warm damp cloth and let rise until you have a nice round crown on both.
- Heat oven to 425 degrees F.
- Uncover and place in the oven and cook for approximately 30 minutes
I enjoy a nice crust on my bread and a soft, moist inside. Because this bread is kneaded and risen three separate times it allows for an amazing consistency and I truly believe this will be your go-to bread recipe!
